This Extra Dry Prosecco, strictly Denominazione di Origine Controllata (DOC) Treviso, comes from Podere Carboncine, located in the town of Roncade, province of Treviso. Its exclusivity is guaranteed by the totality of Glera grapes, carefully cultivated in clay soils enriched by the presence of caranto. The Sylvoz training system, with a planting density of 2700 vines per hectare, is perfectly adapted to the microclimate of the area.
Martinotti-Charmat Method Vinification: Innovation and Tradition
The winemaking process begins with soft pressing of the grapes, followed by cold decanting of the must. Primary fermentation takes place in temperature-controlled steel vessels (18°/19°C) with selected yeasts. A distinctive feature of this Prosecco is the “presa di spuma,” with the wine kept on its own noble yeasts for about 3 months before moving to the autoclave for re-fermentation according to the Martinotti-Charmat method. The result is a wine that combines tradition and innovation.

Prosecco Spumante Barbaran has a pale straw yellow color and a slender, persistent and consistent perlage. Its broad and delicate bouquet offers notes of newly ripe white fruit, with apple in the foreground and subtle floral tones.
