The Unique Chardonnay Trail at Barbaran Winery
Vinification begins with artisanal harvesting followed by soft pressing and cold static decantation of the must. Primary fermentation takes place in temperature-controlled steel vessels (19°C) with selected yeasts. The wine matures on its own yeasts for about 3-4 months. After clarification, this is followed by refinement in an autoclave that imparts a slight effervescence. Next, the wine is bottled and allowed to rest for 4 to 6 weeks.
