Fermentation in temperature-controlled steel vessels in the presence of the skins is carried out by selected yeasts, resulting in a wine of remarkable complexity. The lands of Piave offer Cabernet Franc the ideal terroir, due to the presence of sandy, medium-textured soils to clay. The deep ruby red color anticipates a unique herbaceous bouquet, with smoky and bell pepper traces, due to the high pyrazine content.
Aggressiveness and Refinement in Every Sip
Cabernet Franc is distinguished by a flavor profile that combines aggressiveness, aristocracy, fullness, acidity and rich tannins when young. While when aged, it loses not quite the youthful herbaceousness, evolving with age toward a generous elegance. Ideal with cold meats, roasts, poultry and game, the wine reveals its full potential at specific serving temperatures between 14-16° when young and between 16-18° when aged.
